We strive on using mostly organic ingredients whenever possible, with an emphasis on regional products, reputed sources, and, obviously, quality. We only use natural flavorings and colorings. Our flours are all USDA-certified organic. We also use organic ghee, milk, butter, raisins, chocolate, and more. Our eggs come directly from our own organically-fed, free-ranging hens.
For ingredients that are not certified organic, we privilege quality ingredients from sustainable practices, and look for local or regional sources as much as possible. As for our vanilla beans, we source them straight from a trusted producer in Madagascar.
In this uncertain economy, where the food supply chain is operating under stress, it is sometimes necessary for us to make adjustments. We however will always privilege quality.
As an additional consequence, our prices may occasionally fluctuate, reflecting what we pay for our ingredients.
