We make this traditional Burgundy region savory treat with Comté (an aged cheese from the Jura Mountains reminiscent of Gruyère), organic eggs, organic wheat flour, and organic butter. Those bite-sized cheese puffs are a great appetizer and pair nicely with a Chardonnay, an IPA, or a light red.
